Yield: 24 cookies
Total time: 1 hour (dependent on whether you already have homemade pumpkin puree)
I N G R E D I E N T S
- 1 cup unsalted butter (melted and slightly cooled)
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup homemade pumpkin puree (see Pumpkin Pie Recipe)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 1/2 teaspoon ground cinnamon 1/2
- 1 teaspoon pumpkin spice
- 1 and 1/2 cup semi-sweet chocolate chips

R E C I P E
- Line a sieve with paper towels and place the pumpkin puree inside. Allow to drain for about 10 minutes to remove excess moisture (this will help the cookies be more “cookie-like” as opposed to more cakey)
- In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
- Stir in the egg yolk and vanilla extract until combined. Stir in the pumpkin puree and mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
- Gradually add the dry ingredients to the wet mixture. Fold in the chocolate chips.
- Cover the bowel with plastic wrap and place in the fridge for 30 minutes – 1 hour.
- Preheat the oven to 350°F. Scoop about 2 tablespoons of dough for each cookie.
- Bake for 10-12 minutes. The edges of the cookies should be light brown and the centers should appear fully cooked.
T I P S
- Try not to make the dough balls too big, as they will spread quite a bit.
- If you like a more cakey texture to your cookies, then skip the first step and use your pumpkin puree as is.
It’s no secret that I absolutely love chocolate chip cookies (this is already the third chocolate chip cookie recipe I’ve posted so far…and there are more coming). After making some pumpkin pies, I still had some leftover pumpkin puree and decided to try a new pumpkin-inspired dessert. These cookies turned out to be a delicious twist on my classic chocolate chip cookie recipe—the perfect way to end the month of November!
