I N G R E D I E N T S
- 3 apples, peeled and cut into small cubes
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons of cinnamon
- 1 teaspoon pumpkin spice
- 1/2 cup unsalted butter, melted
- 2/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 egg
- 1/3 cup Greek yogurt
- Topping:
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon

R E C I P E
- Preheat oven to 375°F. Line a 12-cup muffin pan with muffin tins or coat with non-stick spray.
- In a bowl, combine flours, baking powder, baking soda, salt, cinnamon, and pumpkin spice.
- In athe bowl of your electric stand mixer, combine melted butter, maple syrup, egg, yogurt, and vanilla extract. Mix well. Then add in the flour mixture, stirring until just combined. Fold in the apple cubes.
- Spoon the batter evenly into the muffin cups. In a small bowl, combine sugar and cinnamon, then sprinkle over the muffin tops.
- Bake for 15 minutes (until a toothpick inserted into the center of a muffin comes out clean).
- Cool the muffins in the pan then enjoy with a scoop of ice cream or a tall glass of milk!
T I P S
- Fill the muffin cups to the top as these muffins do not rise much.
- You can replace the melted butter with any neutral-flavored oil.
